Gut loving bircher bowl

We all know that we need to be eating gut friendly, fermented foods every day. I’m a really big fan of Kraut, Kimchi and Kefir but I have introduced them gradually into my diet over the last few years. If you know you could do with a bit more tummy love, this easy recipe is a good place to start.

An easy make ahead bircher muesli or overnight oats! I make a batch most weeks.

Kefir is sour tasting, so adding some potassium packed banana balances that out.

This bowl is packed with so much good plant Protein/fibre/good fat.

You can make it your own with any flavour combos you like.

We are being fed soooo much noise about when to eat, what to eat blah, blah.

It changes every week! right now, I’m choosing to just eat when and what makes me feel my best. Based on my schedule and not on someone else’s opinion.

Making this gut loving bowl in advance alleviates the rushed morning stress, when you end up just swallowing a coffee (Guilty) then wondering why you are shakey and strung out by 10am.

Pop a couple of big spoon fulls in a jar, layer with all the good stuff and pop in you bag for the office or after gym fuel up. Even makes a nice light dinner if you feel like it.

Gut loving bircher bowl

Makes enough for 4/5 days

INGREDIENTS

200ml Kefir

1 banana

juice of ½ an orange

30g oats ( I like GF )

1 TBSP of ground flax

1 TBSP of chia seeds

1 TBSP of dessicated coconut

1 TBSP of hemp hearts

1 tsp of homey or maple syrup

Flavour options

1 tsp of vanilla powder or extract

1 tsp of fresh grated or ground ginger

1 grated carrot and a pinch each of nutmeg/cardamom/all spice

add in a grated apple for extra fibre too

METHOD

Mash the banana with the kefir or throw into a blender.

Pour into a bowl, add all the other ingredients and mix thoroughly.

Choose your flavour and add in, My favourite is vanilla with a pinch of sea salt.

You can add a splash of water here if it looks too thick as the bircher will thicken over night.

I store mine in the fridge, I love these stainless steel containers. The bircher will keep well for 5 days.

This makes enough for 4/5 days for me as I serve it with a huge dollop of greek yoghurt, some fresh fruit or compote.

Great topping ideas are ;

Toasted flaked almonds, apple slices + coconut chips

Sliced banana, maple syrup, peanut butter

warm berries, almond butter, toasted seeds
